A thankful me - 15

Oh hello, Monday. We meet again.

How iiiiiiiiiiiiiiiis everyone!? That’s a question I haven’t asked you guys in a long time! Please please tell me!

This past week has been pretty busy and exhausting and I have to say sleeping in on the weekend was the greatest thing ev-eh!! And then staying in my comfies the whole time was also the greatest thing ev-eh.

I want to give a huge shout out to Lisa, Erin and Lindsay for linking up to the self portrait challenge. You ladies did a beautiful job and are so great for taking the time to play along. Thank you! If you haven’t had a chance to see their pictures, you must check them out. They’re beautiful.

This lovely Monday, I’m thankful for:
- new challenges and busy schedules.
- skype calls with G-man. You know how you say at the beginning that you have nothing to talk about but then 2 hours later, you’re still on the call? Yeah, that was us. Love those conversations.
- getting a $60 pair of jeans (my first colored jeans, no less) for $6 at Kohl’s. I’m in love!

- stormy days. All this rain has been great.
- a gas fireplace for the moments the power goes out. Which it did for 1 1/2 hours. I set up candles all up and down my apt. to light my every step. Thank goodness I own 100 votive candles! They sure came in handy!

- the fact I randomly charged my iPhone before the power went out. I always charge it while I’m sleeping but chose to do it that evening. If I hadn’t it would have died. No power, no phone…who would I have been!?!
- food that others think are good but I think aren’t. {mom, feel free to roll your eyes on this} I made the chicken enchiladas on pinterest that everyone raves are the best they’ve ever had…well…I’m a weirdo and despise anything resembling a casserole. Once I started stirring in the sour cream, I had a feeling they’d taste like one and sure enough, I could barely stomach eating them. The consistency is what I abhor. All that to say, I’m braving having them for leftovers this week, which may induce gagging/dry heaving..and sadly, I’m not joking, but please make them! I know others who love them! Oh and I burnt the garlic bread…I’m so my mother’s daughter.

- the crisp clean sunny days immediately following the storms. Its so smoggy and gross here, I relish those fresh aired days.

Oh, by the way, I did in fact hear a farmer’s cherry orchard was ruined due to our crazy storms, so I was right! If you see fruit at ridiculous prices this season, you sadly know why.

Love the jeans! And love that price too! Kohl's is awesome!

Sorry about the chicken enchiladas. I have a thing about consistency too. Good luck with the leftovers. I probably would not be as brave. :)

I gag at every type of food these days. Usually I am not picky and love ALL food, but I am sure I would have gagged with you this week. I love your jeans!

Haha! The same thing happened to me on pinterest! I made allegedly the best chocolate cake ever and it was disgusting! I had to throw it away. And yes I followed the recipe.

mmmm weekends! So glad your's was restful! Are you just crazy busy this week with the job? Btw, I'm so glad you have something to keep you busy Em! And then you can save up all your 'missing G' time for those fun skype dates :) But really...here's to a full week!

Sad, charred garlic bread. I'm noticing a little char on the enchiladas, too. I think the landlord should cough up a new stove. Maybe you don't have my garlic bread gene, and it's the stove!

I'll have to try the chicken enchiladas, I love Mexican food. Even though you didn't like them, I'll report back to you and let you know how it went. I love trying out new recipes that I find on the internet.

And yay for having a fully charged phone during a black-out. Good job!! The candles looked amazing. Getting to have tons of candles always makes blackouts that little bit cooler and classier :)
